Ingredients

  • 2 (10 oz.) pkg. frozen strawberries
  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 2 cups sugar
  • 1 1/4 cups chopped pecans

Instructions

  1. Mix undrained strawberries, eggs, and oil until well combined.
  2. Sift dry ingredients into the strawberry mixture, reserving about 1/2 cup of flour. Stir to blend thoroughly.
  3. Toss chopped pecans into the reserved flour to prevent sinking, then fold them into the batter.
  4. Pour the batter evenly into two well-greased and lightly floured 9 x 5-inch loaf pans.
  5. Bake in a preheated 350°F oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
  6. If the tops over-brown before the bread is done, loosely cover with foil to prevent burning.
