Ingredients

  • 2 lb. lean beef roast
  • 6 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. corn oil
  • 1 c. onions, chopped
  • 1 c. tomato juice
  • 1 1/2 c. water
  • 1/2 lb. sliced fresh mushrooms
  • 2 Tbsp. flour

Instructions

  1. Remove visible fat from the beef roast and slice into pieces about 2 x 2 x 1/2 inches.
  2. Dredge the beef slices with 6 tablespoons of flour seasoned with 1 1/2 teaspoons of salt and 1/4 teaspoon of pepper.
  3. Brown the meat in 2 tablespoons of corn oil.
  4. Add chopped onions, tomato juice, and 1 1/2 cups of water to the skillet.
  5. Cover and simmer for 1 to 1 1/2 hours until the beef is tender.
  6. Add sliced fresh mushrooms and simmer for an additional 30 minutes.
  7. Thicken the sauce with 2 tablespoons of flour combined with 1/2 cup of water. Add evaporated milk and heat until nearly simmering.
  8. Serve hot over rice or noodles.
