Ingredients

  • 3/4 cup butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 3/4 cup chopped pecans
  • 1 tablespoon finely shredded lemon peel

Instructions

  1. In a large mixing bowl, beat butter on medium speed of an electric mixer about 30 seconds or until softened.
  2. Add sugar and beat well.
  3. Add eggs, one at a time; beat well after each addition.
  4. In a separate bowl, stir together flour, baking soda, and salt.
  5. Add the flour mixture alternately with buttermilk to the butter mixture; beat well after each addition.
  6. Stir in chopped pecans and lemon peel.
  7. Pour batter into a greased and floured 9 x 5 x 3 inch loaf pan; spread evenly.
  8. Bake in a 350°F oven for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes on a wire rack.
  10. Remove from pan and cool completely before slicing.
