Lee'S Lemon Pecan Bread

- In a large mixing bowl, beat butter on medium speed of an electric mixer about 30 seconds or until softened.
- Add sugar and beat well.
- Add eggs, one at a time; beat well after each addition.
- In a separate bowl, stir together flour, baking soda, and salt.
- Add the flour mixture alternately with buttermilk to the butter mixture; beat well after each addition.
- Stir in chopped pecans and lemon peel.
- Pour batter into a greased and floured 9 x 5 x 3 inch loaf pan; spread evenly.
- Bake in a 350°F oven for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes on a wire rack.
- Remove from pan and cool completely before slicing.
