Ingredients

  • 2 cups sifted flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup cooking oil
  • 7 unbeaten egg yolks
  • 3/4 cup pineapple juice
  • 2 teaspoons grated lemon rind
  • 2 teaspoons vanilla
  • 1/2 cup well-drained crushed pineapple
  • 1 cup egg whites
  • 1/2 teaspoon cream of tartar

Instructions

  1. Beat egg whites until very stiff peaks form.
  2. Mix about 1 cup of the egg white mixture into the flour mixture to lighten it.
  3. Gradually pour the egg yolk mixture over the whipped egg whites, gently folding with a rubber spatula just until blended.
  4. Do not stir.
