Ingredients

  • 1/4 cup butter
  • 1 box lemon cake mix
  • 1 tablespoon dried basil
  • 8 ounces light cream cheese
  • 1 1/4 cups raisins
  • 1/4 cup chopped nuts
  • 1 teaspoon lemon juice
  • 1 egg yolk

Instructions

  1. Blend butter, light cream cheese, and egg yolk until fluffy.
  2. Gradually add the lemon cake mix, one-third at a time, mixing well.
  3. Finish mixing the last portion by hand.
  4. Stir in dried basil, raisins, chopped nuts, and lemon juice.
  5. Drop level tablespoons of dough onto a greased cookie sheet.
  6. Bake at 350°F (175°C) for 15 to 18 minutes or until lightly browned.
  7. For bar cookies, press dough into a greased 9 x 13-inch pan and bake accordingly.
