Ingredients

  • 8-inch baked pie shell
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1 cup water
  • 1 teaspoon grated lemon rind
  • 1/2 cup lemon juice
  • 2 slightly beaten egg yolks
  • 4 ounces cream cheese
  • 2 egg whites

Instructions

  1. In a saucepan, combine 3/4 cup sugar, cornstarch, water, lemon rind, lemon juice, and egg yolks.
  2. Cook over medium heat; stir constantly until thickened.
  3. Remove from heat.
  4. Add 4 ounces cream cheese; blend well.
  5. Beat egg whites until stiff peaks form.
  6. Gradually add 1/2 cup sugar to the egg whites and continue beating.
  7. Fold the beaten egg whites into the lemon mixture gently.
  8. Spoon the filling into the baked pie shell.
  9. Chill the pie for 2 hours before serving.
