Ingredients

  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1/4 cup cornstarch
  • 1 cup cold water
  • 3/4 cup milk
  • 3 eggs, separated
  • 1/2 cup lemon juice
  • 1/2 teaspoon grated lemon rind
  • currant jelly

Instructions

  1. Thoroughly mix sugar, salt, and cornstarch in the top of a double boiler.
  2. Add cold water and milk; blend until smooth.
  3. Stir constantly over direct heat until mixture boils and becomes transparent-looking.
  4. Place over boiling water, cover, and cook for 15 minutes.
