Ingredients

  • 1/2 cup water
  • 1/4 cup butter cubed
  • 1/2 cup all purpose flour
  • 2 eggs
  • 1 egg beaten
  • 1/3 cup sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons butter cubed
  • 1 cup heavy whipping cream

Instructions

  1. In a saucepan, bring water and butter to a boil.
  2. Add flour all at once, stirring until a smooth ball forms.
  3. Remove from heat and let stand for 5 minutes.
  4. Add eggs, one at a time, beating well after each addition.
  5. Continue beating until mixture is smooth.
  6. Drop by rounded tablespoonfuls 3 inches apart onto greased baking sheets.
  7. Bake at 400°F for 30-35 minutes or until golden brown.
  8. Remove to wire racks and immediately split puffs and remove tops, discarding soft dough inside.
  9. Set puffs and tops aside to cool.
  10. In a bowl, whip heavy cream until stiff peaks form.
  11. In a small saucepan, combine sugar, lemon juice, and butter, heating until butter is melted.
  12. Let the lemon mixture cool slightly, then fold into the whipped cream.
  13. Fill the cooled puffs with the lemon cream and replace the tops before serving.
