Ingredients

  • 1/2 cup butter
  • 1 cup flour
  • 1/4 cup powdered sugar
  • 2 whole eggs
  • Grated rind from 1 large lemon
  • 2 tablespoons lemon juice
  • 1 cup sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in the microwave.
  3. Add flour and powdered sugar to the melted butter and mix well.
  4. Press the mixture into the bottom of a greased 8 x 8-inch pan to form the crust.
  5. Bake the crust for 20 minutes.
  6. In a bowl, whisk together eggs, lemon rind, lemon juice, sugar, and baking powder.
  7. Pour the lemon mixture over the baked crust.
  8. Bake for an additional 20 minutes or until the filling is set.
  9. Allow to cool before slicing and serving.
