Ingredients

  • 8 fish fillets (about 2 lb.)
  • 1 1/2 cups cooked rice
  • 1 cup shredded sharp Cheddar cheese
  • 1 (10 oz.) package frozen chopped broccoli, thawed
  • 1/3 cup butter
  • 1/3 cup lemon juice
  • 2 teaspoons salt
  • 1/4 teaspoon pepper

Instructions

  1. In a small saucepan, melt 1/3 cup butter.
  2. Add 1/3 cup lemon juice, 2 teaspoons salt, and 1/4 teaspoon pepper; stir well.
  3. In a medium bowl, combine 1 1/3 cups cooked rice, 1 cup shredded Cheddar cheese, thawed chopped broccoli, and 1/4 cup lemon mixture.
  4. Divide the rice mixture among 8 fish fillets; roll-up and place seam-side down in an 11 x 7-inch baking dish.
  5. Pour the remaining lemon sauce over the rolled fillets.
  6. Bake at 375°F for 25 minutes or until the fish flakes easily with a fork.
