Ingredients

  • 2 1/2 cups fresh bread crumbs
  • 4 cloves garlic, minced
  • 6 tablespoons grated Parmesan cheese
  • 1/4 cup chopped fresh thyme or 1 tablespoon dried thyme
  • 1 salmon fillet (3 to 4 pounds)
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon salt
  • 6 tablespoons butter, melted and divided
  • 1/2 cup chopped fresh parsley

Instructions

  1. In a bowl, combine bread crumbs, garlic, parsley, cheese, thyme, lemon zest, and salt; mix well.
  2. Add 4 tablespoons of melted butter and toss lightly to coat; set aside.
  3. Spread the breadcrumb mixture over the salmon fillet.
  4. Drizzle the remaining 2 tablespoons of melted butter over the topping.
  5. Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until the salmon is cooked through.
