Ingredients

  • 12 thin lemon slices
  • 1 (6 1/2 oz.) can tuna
  • 1/2 cup fresh bread crumbs
  • 2 tablespoons minced onion
  • 2 eggs, beaten
  • 1 (10 oz.) can condensed cream of mushroom soup
  • 1 package corn muffin or cornbread mix
  • Snipped parsley

Instructions

  1. Lay lemon slices in the bottom of a lightly greased 10-inch pie plate.
  2. Drain the flaked tuna and blend well with bread crumbs, minced onion, beaten eggs, and condensed cream of mushroom soup.
  3. Gently turn the tuna mixture over the lemon slices.
  4. Prepare the corn muffin or cornbread mix according to package instructions.
  5. Spread the cornbread batter over the tuna mixture in the pie plate.
  6. Sprinkle snipped parsley on top.
  7. Bake in a preheated oven at 400°F for about 30 minutes or until golden brown.
