Ingredients

  • 2 Tbsp. sugar
  • 1 1/2 c. flour
  • 3/4 c. butter
  • 3/4 c. chopped pecans
  • 1 c. powdered sugar
  • 1 (8 oz.) pkg. cream cheese
  • 2 c. Cool Whip
  • 2 (3 1/2 oz.) pkg. instant lemon pudding
  • 2 1/2 c. cold milk

Instructions

  1. Mix sugar, flour, melted butter, and chopped pecans well and press into a 9 x 13-inch pan.
  2. Bake at 350°F for 15 minutes and then cool.
  3. Blend powdered sugar and cream cheese until smooth.
  4. Fold in Cool Whip until well combined.
  5. Spread the cream cheese mixture over the cooled crust and let stand for 15 minutes.
  6. In a separate bowl, mix lemon pudding mix, cold milk, and vanilla, then beat for 2 minutes on low speed.
  7. Spread the lemon pudding layer over the cream cheese layer.
  8. Spread 8 ounces of Cool Whip over the lemon layer.
  9. Sprinkle chopped pecans on top.
  10. Refrigerate before serving.
