Ingredients

  • 1 lb oleo
  • 3 cups sugar
  • 6 eggs
  • 4 cups flour
  • 1 1/2 tsp baking powder
  • 1 lb dates, chopped
  • 1/2 lb candied cherries
  • 1/2 lb candied pineapple
  • 1 1/2 oz lemon flavoring
  • 4 cups pecans, chopped

Instructions

  1. Cream the oleo until smooth.
  2. Gradually add sugar, beating well.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. Stir in 3 cups of flour, lemon flavoring, and chopped pecans.
  5. Toss chopped dates in 1 cup of flour, then fold into the batter.
  6. Divide the batter evenly into two angel food cake pans.
  7. Bake at 250°F until done, approximately 1 hour.
  8. Place a pan of water underneath the cakes while baking.
