Ingredients

  • 1/2 cup olive oil
  • 1/2 cup lemon juice
  • 1 teaspoon parsley
  • 1 teaspoon thyme
  • 1 teaspoon pepper
  • 8 sea scallops
  • 4 thin prosciutto slices
  • 8 large shrimp
  • 4 pearl onions
  • 6 large mushrooms
  • 1 medium red pepper
  • 1 medium yellow pepper

Instructions

  1. Combine olive oil, lemon juice, parsley, thyme, and pepper in a bowl.
  2. Wrap each scallop with a slice of prosciutto and secure with a toothpick.
  3. Place scallops and shrimp in a dish.
  4. Pour the oil mixture over the seafood.
  5. Cover and marinate in the refrigerator for 2 hours.
  6. Alternate threading scallops, vegetables (cut into chunks), and shrimp onto skewers.
  7. Preheat the grill and cook the kabobs until the seafood turns opaque, about 12 minutes, basting frequently and turning once.
  8. Serve the grilled kabobs over long grain rice with pine nuts and lemon juice.
