Ingredients

  • 3 Tbsp. flour
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1/2 c. cold water
  • 1 c. boiling water
  • 3 egg yolks
  • 2 Tbsp. butter
  • 1/4 c. lemon juice
  • grated rind of 1 lemon

Instructions

  1. Mix sugar, cornstarch, and flour in the top of a double boiler.
  2. Add cold water slowly and stir until blended.
  3. Add boiling water, stirring constantly.
  4. Continue stirring and cook until thick and clear.
  5. Stir in beaten egg yolks and butter; cook until eggs thicken.
  6. Remove from heat.
  7. Add lemon juice, lemon rind, and salt.
  8. Stir and let cool.
  9. Pour into a baked pie shell.
