Instructions

  1. Cover the stewing chicken in a heavy soup pot with water.
  2. Add the carrot, celery, salt, and peppercorns.
  3. Simmer until the chicken is tender. Strain the broth.
  4. Add rice or rosamarina to the broth.
  5. Cook for 20 to 25 minutes.
  6. Remove from heat.
  7. Beat the egg whites until frothy but not dry.
  8. Add egg yolks one at a time and slowly add lemon juice.
  9. Gradually add about 2 cups of broth to the egg and lemon mixture.
  10. Pour the mixture back into the pot and stir well.
  11. Add chunks of cooked chicken if desired.
  12. Serve immediately.
