Ingredients

  • 2 boned chicken breasts
  • 2 Tbsp. olive oil
  • 2 Tbsp. clarified butter
  • 1/2 tsp. oregano
  • 1 Tbsp. dried parsley
  • 2 cloves garlic
  • 1 shallot
  • 1/2 tsp. coarse pepper
  • 1/2 c. Madeira wine
  • salt to taste
  • 1 red bell pepper
  • 2 medium carrots
  • 1 potato
  • 2 Tbsp. Worcestershire sauce
  • 1/4 tsp. cayenne pepper
  • 1/2 c. raisins
  • 3 Tbsp. sugar or honey

Instructions

  1. In a saute pan, heat olive oil and sauté garlic and shallot; add ground pepper and salt.
  2. Strain ingredients from oil and place chicken breasts in the pan.
  3. Split the chicken breasts before cooking.
  4. Brown the chicken for 3 minutes on each side at medium-high heat to seal.
  5. Add 1/4 cup of Madeira wine and cover for 5 minutes.
  6. Remove chicken breasts from the pan and set aside.
  7. Add carrots to the pan and cook until they begin to brown.
  8. Return garlic and shallot to the pan.
  9. Add clarified butter to the pan and cook until carrots start to brown.

  14. Rice the boiled potato.

  16. Place the cooked chicken breasts in the center of the plate.
  17. Layer the carrots over the chicken and sprinkle with riced potatoes.
  18. Pour the sauce over the layered ingredients.
