Ingredients

  • 1 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • Grated rind of 1 lemon
  • Juice of 1 lemon
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon melted butter

Instructions

  1. Mix sugar, flour, and salt in a bowl.
  2. Grate the lemon rind and add it to the flour mixture.
  3. Set aside the dry mixture.
  4. Separate the eggs; beat the yolks.
  5. Add lemon juice, milk, and melted butter to the egg yolks and mix well.
  6. Combine the liquid mixture with the dry mixture and stir until smooth.
  7. Beat the egg whites until stiff peaks form.
  8. Gently fold the beaten egg whites into the lemon mixture.
  9. Prepare a 9-inch pie crust in a pie dish.
  10. Pour the filling into the prepared crust.
  11. Bake at 350°F (175°C) for 40 to 45 minutes until set and lightly golden.
