Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 2/3 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • grated rind of lemon
  • 1 teaspoon lemon extract

Instructions

  1. Mix together the butter, sugar, eggs, lemon rind, and lemon extract with a mixer.
  2. Gradually add the flour and baking powder, then pour in the milk and mix until smooth.
  3. Pour the batter into a greased bread loaf pan.
  4. Bake for 55 minutes at 350°F (175°C) until a toothpick inserted into the center comes out clean.
