Ingredients

  • 1 cup sugar
  • 1/2 cup butter (room temperature)
  • 2 to 3 very ripe bananas, crushed
  • 2 eggs
  • 2 cups self-rising flour
  • 3/4 cup milk
  • 3/4 cup pecans, chopped

Instructions

  1. Cream butter and sugar together.
  2. Add eggs, crushed bananas, and milk; mix well.
  3. Stir in self-rising flour and chopped pecans until combined.
  4. Pour batter into a greased loaf pan.
  5. Bake at 350°F (175°C) for 1 hour.
  6. Allow to cool in the pan for 10 minutes, then transfer to a cooling rack.
  7. Enjoy warm, optionally with cream cheese. Makes 2 loaves or muffins.
