  • 1 pkg. raspberry jello
  • 1/2 c. boiling water
  • 1 1/2 c. crushed pineapple
  • 1 sliced banana
  • 1/2 c. chopped nuts
  • 3 oz. pkg. cream cheese
  • 1/4 c. mayonnaise
  • 1 c. heavy cream

Instructions

  1. Dissolve the raspberry jello in boiling water.
  2. Add crushed pineapple and chill until the mixture is partly set.
  3. Add sliced banana and chopped nuts to the jello mixture.
  4. Combine softened cream cheese with mayonnaise and whipped heavy cream until smooth.
  5. Fold the cream cheese mixture into the jello mixture.
  6. Chill the salad until fully set before serving.

Tips & Substitutions

For a richer flavor, consider adding a splash of vanilla extract to the cream cheese mixture. If you don't have heavy cream, you can substitute with half-and-half, though the salad will be less fluffy. You can also use walnuts or pecans instead of chopped nuts for a different texture. Ensure the cream cheese is softened for easier mixing.

Serving Suggestions

This Raspberry Cream Salad is perfect as a light dessert or a refreshing side dish during summer gatherings. It pairs beautifully with Mamaw'S Banana Nut Bread or can serve as a delightful complement to a brunch spread. Garnish with additional fresh raspberries or mint leaves for a pop of color.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. The texture may change slightly, but it will still taste delicious. Avoid freezing, as the cream mixture may separate upon thawing. Serve chilled for the best flavor.
