Ingredients

  • 1 c. self-rising flour
  • 1/2 c. margarine, softened
  • 1/4 c. powdered sugar
  • 2 tsp. grated lemon peel
  • 2 Tbsp. lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. Mix self-rising flour, softened margarine, and powdered sugar in a small bowl.
  3. Press the mixture evenly into the bottom and about 5/8-inch up the sides of an 8 x 8 x 2-inch square pan.
  4. If the dough is sticky, flour your fingers to help press it into the pan.
  5. Bake the crust for about 20 minutes.
  6. Meanwhile, beat the remaining ingredients (lemon peel, lemon juice, and any other ingredients) in a medium bowl on medium speed until light and fluffy.
  7. Pour the lemon filling over the hot crust.
  8. Bake for about 25 minutes until the filling is set.
  9. Let stand until cool, then cut into small pieces to serve.
