Ingredients

  • 2/3 cup butter
  • 1/3 cup chopped celery
  • 1 cup herb seasoned stuffing mix
  • onion
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dill weed

Instructions

  1. Preheat oven to 350°F.
  2. In a 1-quart saucepan, melt 1/3 cup butter over medium heat.
  3. Add chopped celery and onion, and sauté until tender.
  4. Stir in herb seasoned stuffing mix, chopped parsley, lemon juice, grated lemon peel, salt, and pepper.
  5. Set aside the stuffing mixture.
  6. Cut each fish fillet into 8 pieces of approximately 3 x 4 inches.
  7. Place 4 fillet halves in an ungreased baking dish.
  8. Top each with 1/4 cup of the stuffing mixture, then place the remaining fillet halves on top.
  9. Melt another 1/3 cup of butter in a saucepan.
  10. Stir in dill weed into the melted butter.
  11. Pour the dill-butter mixture over the fish fillets.
  12. Bake for 20 to 30 minutes or until the fish flakes easily with a fork.
