Ingredients

  • 15 1/2 oz. can salmon
  • 10 oz. package frozen peas
  • 1/4 cup chopped celery
  • 4 oz. can sliced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups prepared mashed potatoes
  • 2 teaspoons instant minced onion
  • grated Parmesan cheese

Instructions

  1. Drain and flake the salmon.
  2. Prepare frozen peas as directed on the package.
  3. Combine cooked peas, chopped celery, drained mushrooms, salt, and pepper in a mixing bowl.
  4. Stir minced onion into the prepared mashed potatoes until well combined.
  5. Spoon the salmon mixture into a greased 2-quart casserole dish.
  6. Top with the mashed potatoes.
  7. Sprinkle grated Parmesan cheese over the top.
  8. Bake at 350°F for 20 to 25 minutes or until the potatoes are lightly browned and the casserole is bubbling.
