Ingredients

  • 1/2 cup cut up bell peppers
  • 1/2 cup cut up onions
  • 1 stick oleo
  • 1 can creamed corn
  • 1 can whole kernel corn
  • 2 eggs
  • 1 box Jiffy corn bread mix
  • 2 cups sour cream
  • 2 cups grated cheese

Instructions

  1. Saute peppers and onions in hot oleo.
  2. Mix creamed corn, whole kernel corn, eggs, and corn bread mix until all is moist.
  3. Add the sautéed peppers and onions to the mixture and stir well.
  4. Pour the mixture into a greased oblong baking dish.
  5. Bake for 35 minutes at 350°F (175°C).
  6. Remove from oven and spread sour cream and grated cheese evenly over the top.
  7. Return to the oven until the cheese is melted and bubbly.
