Ingredients

  • 1 cup margarine, softened
  • 2 1/4 cups plain flour, divided
  • 1/2 cup powdered sugar
  • 4 eggs, beaten
  • 2 cups sugar
  • 1/2 cup lemon juice
  • dash of salt
  • 1 teaspoon baking powder
  • confectioners' sugar

Instructions

  1. Combine margarine, 2 cups of flour, and 1/2 cup of powdered sugar and blend until smooth.
  2. Pat the dough into a lightly greased 13 x 9-inch pan.
  3. Bake at 300°F (150°C) for about 30 minutes or until lightly browned.
  4. In a separate bowl, beat eggs, then mix in sugar and lemon juice.
  5. Pour the lemon mixture over the baked crust.
  6. Bake at 300°F (150°C) for 35 minutes or until set.
  7. Sprinkle with additional confectioners' sugar and cut into small bars.
