Light Crab Spread

A light, flavorful crab spread with fresh herbs, vegetables, and creamy cheese, perfect as an appetizer with bread or vegetables for seafood lovers and entertaining occasions.

Ingredients

  • 1/2 white onion
  • 1 clove garlic
  • 8 oz. Neufchatel cheese
  • 1 Tbsp. skim milk
  • 1 medium tomato, seeded
  • 1/2 small green pepper
  • 3/4 cup fresh parsley
  • 1 tsp. lemon juice
  • 1/8 tsp. salt
  • 4 oz. imitation crab meat, flaked
  • cocktail bread or vegetable slices

Instructions

  1. Finely chop the white onion; press the garlic.
  2. Mix the chopped onion, garlic, Neufchatel cheese, and skim milk until well blended.
  3. Spread the cheese mixture in a shallow serving dish.
  4. Coarsely chop the tomato, green pepper, and parsley.
  5. Mix the chopped tomato, green pepper, 2 tablespoons of parsley, lemon juice, and salt.
  6. Spoon the vegetable mixture on top of the cheese spread.
  7. Top with flaked imitation crab meat.
  8. Sprinkle with the remaining parsley.
  9. Chill the spread before serving.
  10. Serve with cocktail bread or vegetable slices.
