Ingredients

  • 4 c. pecan halves
  • 2 c. whole candied cherries
  • 1 1/2 c. light raisins
  • 1 1/2 c. butter or margarine
  • 3 eggs
  • 3 c. sifted flour
  • 1 1/2 c. sugar
  • 1 (1 oz.) bottle lemon extract
  • 3/4 tsp. baking powder
  • 2 c. English walnuts
  • 2 c. diced candied pineapple
  • light corn syrup
  • 3/4 tsp. baking powder

Instructions

  1. In a large mixing bowl, combine pecans, walnuts, cherries, pineapple, and raisins. Toss with 1 cup of flour and set aside.
  2. Cream together the butter or margarine and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Stir in lemon extract.
  5. Sift together the remaining 2 cups of flour and baking powder. Add in thirds to the creamed mixture, mixing well.
  6. Add the batter to the fruit mixture, mixing well to coat all fruits and nuts.
  7. Transfer the batter to a well-greased 10-inch tube pan, covering tightly with foil.
  8. Place a pan of hot water on the bottom oven rack.
  9. Bake the cake on the shelf above the water in a slow oven at 300°F for 2 1/2 hours.
  10. Remove the foil and bake for an additional 3 to 5 minutes or until the top is slightly dry.
  11. Remove the cake from the pan when cooled thoroughly. Store in a tightly covered container.
