Ingredients

  • 1 cup powdered sugar
  • 1 cup soft butter or margarine
  • 1 teaspoon vinegar
  • 2 1/4 cups flour
  • 1 1/2 to 2 teaspoons ground ginger
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Heat oven to 400°F (200°C).
  2. Mix powdered sugar, soft butter or margarine, and vinegar until well combined.
  3. Stir in flour, ground ginger, baking soda, and salt until the dough comes together.
  4. If the dough is too dry, work in milk or cream, 1 teaspoon at a time, until workable.
  5. Roll dough 1/8-inch (3 mm) thick on a floured surface.
  6. Cut with cookie cutters and place on ungreased cookie sheets.
  7. Bake until light brown, about 6 to 8 minutes.
  8. Cool slightly and carefully remove from cookie sheet.
  9. Decorate with frosting if desired.
