Ingredients

  • 1 cup sugar, divided
  • 3 tablespoons cornstarch
  • 1 1/2 cups cold water
  • 2 egg yolks
  • 1 tablespoon corn oil margarine
  • 1 tablespoon grated lemon rind
  • 1/4 cup freshly squeezed lemon juice
  • 1 unbaked 9-inch pie shell
  • 4 egg whites

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a heavy 2-quart saucepan, combine 3/4 cup sugar, cornstarch, and water.
  3. Mix until cornstarch is thoroughly dissolved.
  4. Add egg yolks and whisk thoroughly.
  5. Bring to a boil over medium heat and allow to boil for 1 minute.
  6. Remove from heat and add margarine; mix well.
  7. Add grated lemon rind and lemon juice; mix well.
  8. Allow the custard to cool.
  9. Spoon the custard into the unbaked pie shell.
  10. In a separate bowl, beat egg whites until stiff peaks form.
  11. Spread or pipe the meringue over the cooled custard in the pie shell.
  12. Bake the pie in the preheated oven for about 10-15 minutes, or until the meringue is golden brown.
