Light Salmon Mousse

A light, creamy salmon mousse infused with fresh dill and yogurt, perfect as an elegant appetizer for special occasions or entertaining guests.

Ingredients

  • 14 oz. can red or pink salmon, drained, with liquid reserved
  • 1 cup plain nonfat yogurt
  • 1 cup nonfat cottage cheese
  • 1 packet unflavored gelatin
  • 1/4 cup chopped fresh dill
  • black pepper to taste
  • thinly sliced cucumber (optional)

Instructions

  1. Put salmon in a large bowl and mash with bones.
  2. In a blender or mixer, combine yogurt and cottage cheese.
  3. Pour the yogurt and cottage cheese mixture into the salmon and stir.
  4. Add chopped dill and mix well.
  5. Pour salmon liquid into a small pan.
  6. Over low heat, stir in unflavored gelatin until dissolved, about 2 minutes.
  7. Add the gelatin mixture to the salmon and mix thoroughly.
  8. Line the bottom of a 3 to 4-cup mold, bowl, or loaf pan with dill sprigs and cucumber slices if desired.
  9. Pour the salmon mixture into the prepared mold.
  10. Chill for 2 to 3 hours until set.
  11. Unmold the mousse and serve with crackers.
