Ingredients

  • 1 package lime and lemon flavored gelatin
  • 2 cups boiling water
  • 1 cup evaporated milk
  • 2 tablespoons lemon juice
  • 1 pound creamed cottage cheese
  • 2 cups drained crushed pineapple
  • 1/2 cup chopped celery
  • 1/2 cup chopped nuts
  • 1 cup mayonnaise
  • 2 teaspoons horseradish

Instructions

  1. Combine the lime and lemon flavored gelatin in a bowl.
  2. Dissolve the gelatin in 2 cups of boiling water and let it cool until slightly thickened.
  3. Stir in the evaporated milk and lemon juice.
  4. Chill the mixture until it is slightly thickened.
  5. Fold in the drained crushed pineapple, chopped cottage cheese, chopped celery, and chopped nuts.
  6. Pour the mixture into a 2-quart mold and chill until set.
  7. Blend mayonnaise with horseradish to create the topping.
  8. Serve the salad with the mayonnaise and horseradish topping.
