Ingredients

  • 2 lb. swordfish
  • 2 tsp. lime zest
  • 1/4 cup olive oil
  • juice of 3 limes
  • 1 clove garlic

Instructions

  1. Place the swordfish in a shallow pan.
  2. In a small bowl, combine lime juice, lime zest, minced garlic, and olive oil.
  3. Pour the marinade over the fish and turn to coat thoroughly.
  4. Cover and refrigerate for 2 to 3 hours.
  5. Drain the fish and broil or grill until it flakes easily with a fork, about 8 to 10 minutes per inch of thickness.
  6. Serve garnished with cilantro.
