Lime Soup

- Simmer the first eight ingredients (chicken, water, peppercorns, parsley, celery, onion, salt, thyme) for 1 1/2 hours.
- Remove the chicken from the bones and set aside.
- Strain the broth to remove solids.
- Saute chopped onion and green pepper in oil until tender.
- Add chopped tomatoes to the vegetables and cook for 5 minutes.
- Add the strained broth and the juice of the limes. Stir in chopped coriander or parsley.
- Simmer the mixture for 20 minutes.
- Add the cooked chicken to the soup and heat through.
- Garnish with tortilla chips, lime slices, and lightly sprinkle with cheese.
