Ingredients

  • 1 (3 to 3 1/2 lb.) chicken
  • 10 c. water
  • 6 peppercorns
  • 3 sprigs parsley
  • 1 stalk celery
  • 1 medium onion
  • 2 tsp. salt
  • 1/2 tsp. thyme
  • 2 Tbsp. oil
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 tomatoes, chopped

Instructions

  1. Simmer the first eight ingredients (chicken, water, peppercorns, parsley, celery, onion, salt, thyme) for 1 1/2 hours.
  2. Remove the chicken from the bones and set aside.
  3. Strain the broth to remove solids.
  4. Saute chopped onion and green pepper in oil until tender.
  5. Add chopped tomatoes to the vegetables and cook for 5 minutes.
  6. Add the strained broth and the juice of the limes. Stir in chopped coriander or parsley.
  7. Simmer the mixture for 20 minutes.
  8. Add the cooked chicken to the soup and heat through.
  9. Garnish with tortilla chips, lime slices, and lightly sprinkle with cheese.
