Linda's Salsa is a fresh, mildly spicy tomato and bean dip with cilantro and onion, perfect for snacking or as a versatile taco and chip accompaniment.

Ingredients

  • 2 cans coarsely chopped tomatoes, drained
  • 1 can black-eyed peas, drained
  • 1/2 cup chopped fresh cilantro
  • 1 cup chopped red onion
  • 1 tablespoon white vinegar
  • 1 tablespoon salad oil
  • salt and pepper to taste

Instructions

  1. Mix all ingredients in a bowl.
  2. Heat the salsa with hot pepper sauce to taste.
  3. Serve with tortilla chips.
  4. Use as a substitute for taco sauce, minus the black-eyed peas.
