Lindsey'S Chicken Chowder
Lindsey's Chicken Chowder offers a creamy, hearty blend of tender chicken, potatoes, and vegetables, perfect for comforting family dinners or cozy gatherings.
Ingredients
- 2 whole chicken breasts, skinned and boned ⓘ
- 1 cup water ⓘ
- 1 medium onion, chopped
- 1 medium carrot, shredded ⓘ
- 1 clove garlic, minced ⓘ
- 2 teaspoons instant chicken bouillon granules ⓘ
- 1/8 teaspoon ground red pepper ⓘ
- 1 medium potato, peeled and cut in small pieces ⓘ
- 12-ounce can evaporated milk ⓘ
- 1 tablespoon cornstarch ⓘ
Instructions
- In a saucepan, combine chicken, water, onion, carrots, garlic, bouillon granules, and red pepper; bring to a boil, then reduce heat.
- Cover and simmer for 10 minutes.
- Stir in potatoes and simmer, covered, about 15 minutes more or until chicken and potatoes are tender.
- Remove the chicken from the pan.
- When cool, cut the chicken into bite-sized pieces.
- Return the chicken to the pan and mash the potatoes slightly.
- Combine evaporated milk and cornstarch, then add to the saucepan.
- Cook and stir until the mixture thickens and becomes bubbly.
- Cook and stir for an additional 2 minutes.
- Optional: sprinkle with chopped chives before serving.
