Ingredients

  • 2 whole chicken breasts, skinned and boned
  • 1 cup water
  • 1 medium onion, chopped
  • 1 medium carrot, shredded
  • 1 clove garlic, minced
  • 2 teaspoons instant chicken bouillon granules
  • 1/8 teaspoon ground red pepper
  • 1 medium potato, peeled and cut in small pieces
  • 12-ounce can evaporated milk
  • 1 tablespoon cornstarch

Instructions

  1. In a saucepan, combine chicken, water, onion, carrots, garlic, bouillon granules, and red pepper; bring to a boil, then reduce heat.
  2. Cover and simmer for 10 minutes.
  3. Stir in potatoes and simmer, covered, about 15 minutes more or until chicken and potatoes are tender.
  4. Remove the chicken from the pan.
  5. When cool, cut the chicken into bite-sized pieces.
  6. Return the chicken to the pan and mash the potatoes slightly.
  7. Combine evaporated milk and cornstarch, then add to the saucepan.
  8. Cook and stir until the mixture thickens and becomes bubbly.
  9. Cook and stir for an additional 2 minutes.
  10. Optional: sprinkle with chopped chives before serving.
