Ingredients

  • 4 eggs
  • 2 cups leftover chicken, turkey, or ham
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 1/2 cups water

Instructions

  1. Boil eggs, cool them, and dice.
  2. Cut or separate meat into small pieces.
  3. In a skillet, melt 3 tablespoons of butter.
  4. Add flour, salt, and black pepper to the melted butter and stir until well combined.
  5. Gradually add water, stirring constantly to create a smooth sauce.
  6. Add the diced meat and eggs to the sauce.
  7. Stir for approximately 2 minutes until heated through.
  8. Serve over toast, toasted bun, or English muffin.
