Ingredients

  • 4 cups flour, sifted
  • 1 pound ground hazelnuts
  • 1 pound butter
  • 3 3/8 cups powdered sugar
  • 1 whole egg
  • 2 egg yolks
  • 1 teaspoon powdered cinnamon
  • Zest of 1 lemon, grated

Instructions

  1. Preheat oven to 350°F. Butter a 10-inch springform pan that is 2 inches high.
  2. Work the sifted flour, ground hazelnuts, butter, powdered sugar, whole egg, egg yolks, cinnamon, and lemon zest into a dough.
  3. Press three-quarters of the dough into the bottom and sides of the prepared pan.
  4. Fill the crust with jam of your choice.
  5. Roll out the remaining dough to about 1/4 inch thickness. Cut into strips and arrange in a criss-cross pattern over the jam filling.
  6. Brush the top with the remaining egg yolk.
  7. Bake for 45 minutes. Cool before serving.
