- Preheat oven to 350°F. Butter a 10-inch springform pan that is 2 inches high.
- Work the sifted flour, ground hazelnuts, butter, powdered sugar, whole egg, egg yolks, cinnamon, and lemon zest into a dough.
- Press three-quarters of the dough into the bottom and sides of the prepared pan.
- Fill the crust with jam of your choice.
- Roll out the remaining dough to about 1/4 inch thickness. Cut into strips and arrange in a criss-cross pattern over the jam filling.
- Brush the top with the remaining egg yolk.
- Bake for 45 minutes. Cool before serving.
