Lithuanian Kugelis is a hearty baked potato casserole with smoky bacon, aromatic herbs, and creamy sour cream, perfect for comforting family dinners or festive gatherings.

Ingredients

  • 3 to 4 large red potatoes
  • 1 small container sour cream
  • 1 lb bacon
  • 1/2 yellow onion
  • 1 small can evaporated milk
  • 4 large eggs
  • garlic powder
  • salt
  • pepper
  • sweet basil

Instructions

  1. Place 1/2 stick of butter in a frying pan and melt.
  2. Cut the bacon and yellow onion into small pieces.
  3. Cook bacon and onion in butter until translucent.
  4. Peel and cut 1 potato into small pieces and set aside.
  5. Peel and cut the remaining potatoes.
  6. Place all potatoes into a large mixing bowl.
  7. In a blender, crack the eggs and blend briefly.
  8. Add the set-aside potato to the blender and blend briefly.
  9. Add salt, pepper, and garlic powder to the blender, then add more potatoes, salt, pepper, and garlic powder until all potatoes are added.
  10. Pour evaporated milk into the blender and blend on setting 2 until potatoes are coarse.
  11. Pour the blended potato mixture into the large mixing bowl.
  12. Add the cooked bacon and onions to the bowl and mix well.
  13. Pour the mixture into a buttered glass dish and sprinkle basil on top.
  14. Bake at 325°F (160°C) for 1 hour.
  15. Allow to cool, then cut into squares and serve with sour cream.
