Ingredients

  • 1 large can V-8
  • 1 small eggplant, cut into 1-inch cubes
  • 8 oz. mushrooms, sliced or diced
  • 1 cup green beans
  • 1 small potato, diced
  • 2 carrots, sliced thin

Instructions

  1. Add eggplant, mushrooms, green beans, potato, and carrots to the crock-pot.
  2. Pour in the V-8 juice over the vegetables.
  3. Season with oregano, Italian seasoning, or your preferred spices.
  4. Cover and cook on low for 6 to 8 hours.
  5. Serve in large soup bowls.
  6. Sprinkle with Parmesan cheese before serving.
