Ingredients

  • 1/2 cabbage head, grated
  • 2 carrots, grated
  • 1/2 cup chopped onions
  • 1/4 cup chopped bell pepper
  • 1/2 cup vinegar
  • 6 packs Equal sweetener
  • salt and pepper to taste

Instructions

  1. Combine grated cabbage, grated carrots, chopped onions and bell pepper in a large bowl.
  2. In a separate bowl whisk together vinegar, Equal sweetener, salt and pepper until well mixed.
  3. Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Cover and refrigerate for several hours or overnight to allow flavors to meld.
  5. Serve chilled, and keep leftovers refrigerated for up to 3 days.
