Instructions
- Soak dried black-eyed peas in enough water to cover for 6 hours or overnight.
- Drain the peas well.
- Transfer peas to a saucepan and add enough water to cover.
- Bring to a boil over high heat.
- Reduce heat and simmer until tender, about 45 minutes.
- Drain the peas well and transfer to a large bowl.
- Blend in Italian salad dressing and let cool.
- Add diced pimiento, green onion, jalapeno, green pepper, onion, garlic, hot pepper sauce, and salt.
- Mix well and serve.
