Ingredients

  • 2 lb. raw shrimp (30 per pound)
  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 egg, slightly beaten
  • 2 tablespoons salad oil
  • 1/2 to 1 cup ice water
  • crushed corn flakes

Instructions

  1. Peel the shrimp and dry them on paper towels, top and bottom.
  2. Devein the shrimp if desired.
  3. Combine the flour, sugar, and salt in a bowl.
  4. Add the slightly beaten egg, salad oil, and gradually pour in ice water, stirring until the batter has the consistency of pancake batter or thinner.
  5. Crush the cornflakes with your hands on a separate plate; do not use pre-made crumbs as they are too fine.
  6. Dip each shrimp into the batter, then roll in the crushed cornflakes to coat thoroughly.
  7. If necessary, crush more flakes to ensure a good coating.
  8. Heat oil in a deep fryer and cook 8 to 12 shrimp at a time for about 1 minute or until golden brown.
  9. Drain the fried shrimp on paper towels and serve immediately.
