Ingredients

  • 2 cups flour
  • 2 cups cornmeal
  • 2 1/2 tablespoons baking powder
  • 2 teaspoons salt
  • 1/2 cup sugar
  • 4 eggs
  • 3/4 cup milk
  • 1/3 cup salad oil
  • 2 2/3 cups mashed cooked or canned yams

Instructions

  1. Sift flour with cornmeal, baking powder, salt, and sugar; set aside.
  2. Combine eggs, milk, and oil in a large bowl; beat until smooth.
  3. Add yams; beat until blended.
  4. Add the flour mixture, stirring only until the flour mixture is moistened.
  5. Spoon into two greased 8-inch square pans.
  6. Bake at 425°F for 35 to 40 minutes.
  7. Cut into squares and serve warm.
