Ingredients

  • 1 lb. turkey sausage
  • 9 egg substitute
  • 3/4 cup skim milk
  • 1/4 cup polyunsaturated margarine
  • 12 oz. Cheddar cheese (containing no more than 2 to 6 grams fat per ounce)
  • 24 oz. frozen hash browns

Instructions

  1. Cook and drain the turkey sausage.
  2. Spread the cooked sausage evenly over the bottom of a 9 x 13-inch pan sprayed with Pam.
  3. In a bowl, beat together the egg substitute, skim milk, and margarine until well combined.
  4. Pour the egg mixture over the sausage in the pan.
  5. Layer frozen hash browns over the egg mixture.
  6. Sprinkle Cheddar cheese evenly over the hash browns.
  7. Bake in a preheated oven at 350°F (175°C) for 1 hour or until the casserole is set and golden.
