Ingredients

  • 2 large potatoes, washed, peeled, diced
  • 1 large onion, diced
  • 1 tsp. salt
  • 1 16 oz. can of cream style corn
  • 1 16 oz. can of whole kernel corn
  • 1 12 oz. can of evaporated milk
  • 1 quart skim milk
  • 1/2 inch slice of deli ham, diced (optional)
  • Pepper to taste

Instructions

  1. In a heavy 6-quart Dutch oven, place the diced potatoes, diced onion, and salt.
  2. Pour water into the pan until the vegetables are covered.
  3. Bring to a boil and cook until the potatoes can be pierced with a fork, about 15-20 minutes.
  4. Add the cans of cream-style and whole kernel corn with their liquid; stir.
  5. Add the evaporated milk and skim milk; stir to combine.
  6. Add the diced deli ham, if using; heat thoroughly.
  7. Season to taste with pepper and paprika before serving.
