Ingredients

  • 2 lb. tomatillos
  • 3 Serrano chiles
  • 1 Tbsp. chopped onion
  • 1 clove garlic
  • 1 Tbsp. chopped cilantro
  • oil
  • dash of soda
  • dash of sugar
  • salt and pepper
  • 1 c. whipping cream
  • grated Jack or Cheddar cheese
  • 12 corn tortillas
  • hot sauce
  • 2 c. cooked chicken, shredded
  • 7 Tbsp. butter
  • 2 Tbsp. chopped onion
  • 1 clove garlic
  • 1/2 c. flour
  • 1/2 c. flour

Instructions

  1. Remove papery husks from tomatillos and wash them along with the chiles.
  2. Cook the tomatillos and chiles in boiling water until tender, about 15 minutes.
  3. Remove stems and seeds from the chiles. Place the drained tomatillos and chiles in a blender.
  4. Add chopped onion, garlic, and cilantro to the blender and blend until pureed.
  5. In a saucepan, melt butter and add chopped onion and garlic, cooking until fragrant.
  6. Stir in flour and cook for 1-2 minutes to make a roux.
  7. Gradually add whipping cream, stirring constantly until the sauce thickens.
  8. Season the sauce with salt, pepper, a dash of soda, and a dash of sugar to taste.
  9. Warm the corn tortillas and fill them with shredded chicken.
  10. Roll the filled tortillas and place them in a baking dish.
  11. Pour the green sauce over the rolled tortillas.
  12. Top with grated Jack or Cheddar cheese and spoon some white sauce over the top.
  13. Bake in a preheated oven at 375°F (190°C) until bubbly and cheese is melted, about 20 minutes.
  14. Serve hot with hot sauce on the side.
