Ingredients

  • 1/4 cup nonfat milk
  • 1/4 cup prune puree
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 6 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups hot water
  • 1 1/2 c. hot water

Instructions

  1. Preheat oven to 350°F.
  2. Coat an 8-inch square baking pan with vegetable cooking spray; set aside.
  3. In a mixer bowl, beat nonfat milk and prune puree until thoroughly blended.
  4. Add all-purpose flour, granulated sugar, 2 tablespoons of cocoa powder, baking powder, and salt.
  5. Beat just until combined.
  6. Spread the batter evenly in the prepared baking pan.
  7. Pour hot water over the batter.
  8. Sprinkle remaining cocoa powder over the top.
  9. Bake in the preheated oven for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool slightly before serving.
