Ingredients

  • 3 cans pinto beans
  • 3 jalapeno peppers
  • 1 medium onion
  • 1 clove garlic
  • 1 Tbsp. oil

Instructions

  1. Finely chop the onion and jalapeno peppers and mince the garlic.
  2. Saute the onion, jalapenos, and garlic in 1 tablespoon of oil in a Dutch oven until fragrant and tender.
  3. Drain the pinto beans, reserving the fluid.
  4. Add the drained beans to the sauteed vegetables and simmer for about 1 hour.
  5. Mash the beans until smooth or desired consistency.
  6. If the beans are dry, add the reserved bean fluid to loosen the mixture.
  7. Use the refried beans for burritos, nachos, or as a side dish.
